Many California cities have mandated all-electric infrastructure in new residential construction. I’ve written about why this is stupid here and here. But there’s a message from Chef Andrew Gruel about how some cities are extending this to commercial kitchens.
For those unfamiliar with cooking, gas stoves are far superior to electric. On a gas stove when you change the heat level, it changes immediately. Electric stoves take time to respond to changed settings. When your butter is on the verge of burning you need to change the temperature now, not two minutes from now.
